Vegan Whipped Feta Tarts

WHIPPED FETA TARTS 🍅🌿
The viral whipped feta tarts with a vegan twist. These tarts are SOyum served alongside summer salads, or as little snacks for a festive event ✨

This is day 8 of my 12 days of vegan Christmas and I’m not slowing down on sharing all the plant-based goodness so you don’t have to miss out this festive season 🫶🏼

VEGAN WHIPPED FETA TARTS RECIPE
Ingredients:
1 sheet of vegan puff pastry (dm me if you want to know the vegan ones!)
½ cup natural greek coconut yoghurt @raglanfoodco
1 block of vegan feta @angelfoodcheese
1 Tbsp olive oil
1 tsp crushed garlic
1 sliced tomato/ or one cup of cherry tomatoes, sliced
To serve:
Drizzle with balsamic or plant-based pesto
Fresh basil leaves

Method:
1. Pre-heat oven to 190 degrees fan-bake.
2. Cut vegan puff pastry into 4 squares and mark out a smaller square in each with a knife (see video).
3. Bake for 10 minutes until puffy.
3. Blend coconut yoghurt, vegan feta, olive oil and crushed garlic until combined and spread onto the inside of each pastry.
4. Place tomatoes on top and sprinkle with salt and pepper. Bake for a further 10 minutes.
5. Serve with balsamic, black pepper, fresh pesto, and basil on top.
