Dairy-free Ginger Kisses

VEGAN GINGERKISSES 💋
These are my dairy-free twist on the classic Ginger Kiss Biscuits. They’re light, fluffy, sweet and delicious.
Make sure to store them in a cool environment (fridge if you’re in a hot climate - otherwise pantry is fine) and enjoy them within the week.

Eden Vegan Ginger Kisses
Ingredients
½ cup brown sugar
½ cup vegan butter, softened
¼ cup maple syrup
¼ cup coconut oil, melted
Pinch of salt
1 ½ cups self-raising flour
1 Tbsp ginger powder
1 Tbsp cinnamon
1/2 tsp baking powder
Vegan Buttercream:
½ cup vegan butter
1 cup icing sugar
1 tsp vanilla essence

Method
1. In a large mixing bowl, beat together the brown sugar, vegan butter, maple syrup, coconut oil and a pinch of salt
until combined.
2. Slowly sift in the dry ingredients, folding well throughout.
3. Pop the mixture in the fridge to chill for 20 minutes and pre heat oven to 170 degrees fan-bake.
4. Roll mixture into 12 balls and place in the oven to bake for 12 minutes.
5. Prepare the vegan buttercream filling by whipping mixture together.
6. Once the fluffy ginger cookies have baked, scoop the vegan buttercream on top and sandwich together, and set in the fridge for 15 minutes. Store in the fridge until consumed.
