Vegan Lolly Cake

Lolly Cake is a kiwi classic, but did you know it could be made vegan friendly?

My vegan lolly cake recipe became a hit online, loved by my Kiwi followers in particular for its nostalgic flavour. With gelatine free lollies readily available at supermarkets, this slice is easy to make and tastes just like the original. Whether you're a longtime fan of lolly cake or discovering it for the first time, my vegan version is a delicious and cruelty-free alternative that everyone can enjoy.

Vegan Lolly Cake


1 packet of vegan malt biscuits
1 cup of vegan lollies
1/4 cup melted vegan butter
1/2 can of vegan condensed milk
1/2 cup shredded coconut

Method:
1. Finely blend a packet of vegan malt biscuits. Chop the vegan lollies into smaller pieces and add into a large mixing bowl, with all ingredients.
2. Mix well and press into a log or rectangle tray.
3. Sprinkle in shredded coconut over the top and press in lightly.
4. Set in the fridge for at least 1 hour before cutting into squares!
