Pesto Tofu Scramble

Shake things up with this tasty vegan pesto tofu scramble! Made with fresh, plant-based ingredients, it's a delightful twist on the traditional scrambled egg. Begin by crumbling a block of firm tofu into a bowl, mixing with pesto and a dash of soy milk before sautéing it. As the tofu sizzles, it absorbs vibrant flavors, creating a savory and satisfying dish. This is my new fave, cosy winter way to have scrambled tofu! It’s a super simple, nourishing dish to make. Ideal for a quick and easy breakfast, to whip up for lunch, or make as a quick protein-packed dinner!

Ingredients:
1 block of tofu
1/3 cup soy milk
1 tsp garlic powder
2 Tbsp plant-based pesto
salt and pepper

2 thick slices of ciabatta
1/2 avocado
Fresh dill

Method:
1. In a mixing bowl, fold together crumbled tofu, soy milk, garlic powder, pesto, salt, and pepper.
2. Heat a pan on the stove with a dash of olive oi. Fry tofu for 7 minutes until warm and golden.
3. Toast thick slices of ciabatta and spread with fresh avocado.
4.Layer the pesto tofu scramble on top of the bread, garnishing with fresh dill.
5. Sprinkle salt and pepper on top and enjoy!

Also you could add peas if you want even more greens! 🥬
