Gochujang Cauliflower Bites

You’ve got to try this spicy dish - made with Gochujang! This red chili paste is savoury, sweet, and spicy all at once, making it the ultimate condiment to add to your plant-based veggies. Hailing from Korea, Gochujang has been a beloved staple in their cuisine for YEARS. The fermentation process gives it an extra depth of flavor that comes through in every bite. I’ve used gochujang in this easy vegan recipe as a spicy coating for roasted cauliflower. The perfect winter side dish, you can serve it on rice with tofu and a tasty plant-based meal is ready to go!

Simple Gochujang Cauliflower recipe:

Ingredients:
1 head of cauliflower

Sauce:
2 Tbsp gochujang paste
2 Tbsp maple syrup
2 Tbsp soy sauce
2 Tbsp apple cider vinegar
1 tsp garlic
1 tsp ginger

To serve:
White rice
Spring onion
Crushed peanuts

If you want to add in veggies, I recommend: Red onion, Capsicum with fresh cucumber on the side!

Method:
1. Preheat the oven to 180 degrees celsius.
2. Mix together the gochujang sauce, and pour over the chopped cauliflower.
3. Fold together, seasoning with salt and pepper.
4. Bake for 20 minutes.
5. Serve on white rice with sliced spring onion and crushed peanuts.
