Sweet & Sour Jackfruit curry

Sweet & Sour Jackfruit
- made with @ceresorganics 100% vegan, organic ingredients!

The sour element of this sweet & sour sauce comes from the @ceresorganics Apple Cider Vinegar. It's made from NZ grown apples and is completely undiluted. It contains the 'mother' (like the scoby in booch) which means it's full of good bacteria for our bodies to thrive on! I usually use it for salad dressings, to fluff up my vegan baking and when making sauces as below!

Ingredients:
1/2 cup of basmati rice
1 can of @ceresorganics jackfruit

Sweet & Sour marinade:
1/4 cup Soy Sauce
1 Tbsp Maple Syrup
2 Tbsp Tomato paste
1/4 cup of Apple Cider Vinegar
1 tsp garlic
1 tsp ginger

1 tsp cooking coconut oil
Salt and Pepper

Shallots or white onion
2 carrots
1 Capsicum

Black sesame seeds
Spring onion
Fresh chilli

Method:
1. Drain and shred the canned jackfruit, and add into a medium sized mixing bowl with all marinate ingredients. Leave to soak for 15 minutes in the fridge.
2. Meanwhile, cook the basmati rice on the stove, 1 cup of rice to 2 cups of water. Bring to a boil and then leave to simmer. Next, heat a large fry pan with a tsp of coconut oil.
3. Fry off shallots, carrots and capsicum until golden. Add in the jackfruit mix, and fry on a medium heat for 7 minutes.
4. Serve basmati rice, with the sweet & sour jackfruit. Garnish with fresh spring onion, fresh chilli and black sesame seeds.
