Pumpkin Pesto Pasta

Half salad, half nourishing salad! This pumpkin pesto pasta is the perfect easy dinner, mid-week meal prep or pot luck dinner. Made with fresh basil pesto and vegan-friendly feta. You can throw in any veggies you have on hand and get creative with the nutty toppings 🌿

PUMPKIN PESTO PASTA:

Ingredients:
1 cup orzo pasta
1/3 cup plant based pesto from @genoesefoods
1/2 cup cooked pumpkin
1/3 cooked red onion
3 brown mushrooms, sliced
1/4 cup walnuts, chopped

Method:
1. Preheat the over to 200 degrees fan-bake and roast pumpkin chunks for 20 minutes.
2. Place orzo in a saucepan with boiling water and a large pinch of salt. Bring to a boil and simmer for 12 minutes.
3. Meanwhile add thinly sliced red onion and mushrooms to a pan, frying until soft.
4. Fold all ingredients together with a generous amount of basil pesto, walnuts, salt and pepper.
