Pesto Tofu Schnitzel

Try a new twist on tofu with this Pesto Tofu Schnitzel recipe! Coated in a flavourful blend of plant-based pesto and a crispy wholemeal breadcrumb crumb, this dish is perfect for plant-based meals. Serve it with pesto pasta or in a burger for a delicious twist!

PESTO TOFU SCHNITZEL RECIPE:

Ingredients:
½ cup @genoesefoods Plant-based pesto
300g firm tofu, cut into slabs
1 tbsp olive oil

Crumb
3/4 cup wholemeal breadcrumbs
¼ cup cornstarch
2 tbsp nutritional yeast

METHOD
1. In a medium-sized bowl, mix together all crumb ingredients and season with salt and pepper.
2. Put pesto in a shallow dish. Dip tofu into pesto, then roll in the crumb to coat.
3. Place crumbed tofu on an well oiled pan and fry until golden.

TIP
- Squeezing the liquid out of the tofu prior to cooking will help it absorb the pesto and crumb, making for crispier slabs.
- Serve on top of pesto pasta, fresh green salads or the #plantprotein in a burger.
