Nourishing tofu rice salad

Nourishing tofu rice salad 🌾✨

Inspired by Mian Bar here in Wellington- IYKYK 🍚 ✨

Ingredients:
1/2 cup of white rice
1/4 of a carrot - julienned
1/4 of a cucumber - julienned
1/4 cup edamame
Shredded cabbage
1/2 block of tofu

Chilli lime sauce:
1/4 cup chilli oil
1/4 cup soy sauce
1 tsp paprika
1 tsp crushed garlic
Juice of a lemon
Juice of two limes
Cracked Pepper

Top with:
Crushed peanuts !!! πŸ”‘
Coriander

Method:

1. Cook white rice as you usually would and leave to cool. Mix all sauce ingredients together in a small jar, shaking well.
2. Julienne and dice all vegetables, layering on top of your bowl of rice.
3. Cut tofu into small cubes and sprinkle on top with edamame. Garnish with coriander and peanuts before drizzling the lime chilli sauce allll over the top!
