Ice-cream Peppermint Slice

VEGAN PEPPERMINT SLICE

Ingredients
Chewy base:
1 ½ cup almond meal
¾ cup medjool dates, soaked
¼ cup cacao powder
1/4 cup maple syrup
2 Tbsp almond butter
Pinch of salt

Creamy mint filling:
1 can coconut cream (refrigerate before using)
1 tin coconut condensed milk
1 Tbsp matcha, sifted
2 tsp peppermint essence

Chocolate topping:
1 cup dark chocolate, melted
1 tsp peppermint essence
1/4 cup coconut yoghurt

Method:
1. Blend the base ingredients until combined and press into a baking paper lined loaf tin.
2. Pop in the freezer while preparing the filling.
3. Mix the filling ingredients in a bowl, sifting in the matcha. Pour on-top of the base and pop in the freezer.
4. Mix together melted dark chocolate, coconut yoghurt and peppermint essence for the chocolate topping.
5. Pour on-top of the filling and set in the freezer for two hours before slicing.
6. Store in the freezer until all consumed 🧊
