Cous cous salad with crispy falafel

This #plantbased salad can be a main dish, side salad & is ideal leftovers for lunch! Save the recipe down below to make it for yourself:

Ingredients
1 cup Pearl cous cous (I buy mine from @goodfor)
1 yellow capsicum
1 small red onion
1 cup cherry tomatoes
1/2 cucumber
@ceresorganic organic vegan mayonnaise
Hemp seeds
Cracked pepper and rock salt
Rocket
Falafel topping (I used @alamirbakerynz chilli falafel you can find at @countdown_nz )

Method:
1. In a medium sized pot, cook the Pearl cous cous on the stove 1 cup cous cous to 1.5 cups water. Bring to a boil, then reduce to a simmer until absorbed.
2. Meanwhile, thinly dice all the vegetables and place into your salad bowl.
3. Pull the salad together by adding in cous cous, vegan mayo, salt & pepper and serving on a bed of rocket. Sprinkle with hemp seeds and top with toasted falafel!

You can also use tofu for this dish - I personally love it with raw tofu cubes but that may be a little controversial 😂🤷🏻‍♀️
