The wintery weather in Wellington this weekend has me craving a homemade pie.

VEGAN JACKFRUIT PIE RECIPE
A plant based take on ‘steak and cheese’. Serves 4-6.

INGREDIENTS:
Filling:
1 x canned young green jackfruit
1 x medium brown onion
1 x pack of pre marinated jackfruit
If you don’t have access to pre marinated jackfruit this recipe will work with 2 x cans of Young Green Jackfruit that you can flavour yourself. Try soaking your shredded jackfruit in a combo of 1 tsp sesame oil, 1/4 cup soy sauce, 1 Tbsp maple syrup, 1 tsp paprika and 1/4 tsp cumin prior to making this recipe.

1 tsp paprika
1/4 tsp cumin

Cheese Sauce:
2 Tbsp of vegan butter (I use nuttelex)
2 Tbsp flour
1.2 cups oat milk
2 Tbsp angel food cheese sauce (this could be subbed for nutritional yeast)
1/2 tsp turmeric

Vegan Pastry
1/8 cup oat milk
Broccolini stalks
Rosemary as a garnish

METHOD:
1. Pre-heat oven to 180 degrees.
2. Drain and rinse canned jackfruit. Shred with a fork into small pieces.
3. Dice onion and fry in a hot pan until golden brown.
4. Add in your shredded jackfruit and fry for 2-3 minutes.
5. Pour in pre marinated jackfruit, add 1/4 cup of water and mix until all jackfruit is well coloured.
6. Season with paprika, cumin and 1/4 cup more water.
7. Fry for 5 minutes. Remove from the heat once tender and set aside.
8. Prepare the sauce by melting vegan butter in a medium sized pan.
9. Add in flour, whisking well. Then oat milk, stirring until it thickens.
10. Next add 2 Tbsp vegan cheese sauce mix and turmeric and whisking on a medium heat for 5 minutes.
11. Prepare the pie dish by brushing with coconut oil or laying with baking paper.
12. Mix the cheese sauce throughout jackfruit mix and pack into pie tray.
13. Lay the vegan pastry lid on top and scour with a knife.
14. Brush with oat milk before baking in the oven for 40 minutes until golden brown.
15. Garnish with rosemary and serve with a side of sauteed greens.

Save the recipe down below for a tasty #vegan dessert that’s packed with fresh local produce. Persimmons are an easy way to add fibre, vitamin A and antioxidants to your diet 🍊 have you guys tried them yet?!

Persimmon Crumble Recipe
Ingredients:
Dry:
1 cup of rolled oats
2 Tbsp cinnamon
1/2 nutmeg
1/4 cup brown or coconut sugar
1/4 cup shredded coconut

1/4 cup vegan butter
Two persimmon
Maple syrup
1 tsp Vanilla essence
Lemon Juice

Method:
Pre-heat oven to 190 degrees, fan bake.
In a large bowl mix the dry ingredients together, then rub in the vegan butter until the mix becomes crumbly.
Add a dash of vanilla essence and lemon juice.
Thinly slice the fresh persimmon and layer on the base of an oven proof dish. Drizzle with maple syrup.
Spread the crumble mixture over the top of the Persimmon and ‘pack down’ firmly with the base of a measuring cup.
Bake for 40-45 minutes until golden and crunchy.
Serve while hot with coconut whipped cream or dairy free yoghurt.

Whenever we host a gathering with family/friends, there is no doubt a #plantbased platter on the menu. Just like this past weekend, I love packing mine full with @ceresorganics sea salt & vinegar brown crackers and rice cakes (and they’re always the first thing to be snapped up!)

It’s important to for me to be mindfully indulgent, enjoy a wide variety of vegan foods all while making sure they’re healthy, delicious and ideally #organic 🧡

This beautiful selection is packed full with rice crackers, wafers, plant based pesto, hummus topped with roasted Ceres chickpeas among other delicious plant foods 🥕 🍅

Have you tried the Ceres sea salt rice crackers? They’re my absolute fav rice cracker - so much flavour 👅
