VEGAN HAIRCARE ✨

When I first went vegan I wanted to make sure every product I purchased was not only plant based and #cruetlyfree 🐰 but also environmentally friendly.

I didn’t clear out all my beauty/household/clothing items at once, but when they ran out I purchased a vegan, ideally low waste alternative ♻️

I’ve been vegan for three years and switched to plastic free shampoo & conditioner a few years ago 🧖🏼‍♀️ I wash my hair often, so found I was going through a ridiculous amount of plastic before making the change 😣 I also think shampoo bars are better value for money as they last longer and are much easier to travel with space wise haha.

If you haven’t tried shampoo bars before and always felt curious, @ecostorenz now have a range that are vegan friendly & available in NZ supermarkets. They’re made from natural ingredients and smell so lush ✨

Crumbed ‘fish’ tacos with tartare sauce 🌮

Try this dish, to save the fish 😉🐠🐟🐳

AD I’ve collaborated with the team at @naturescharm for another delicious recipe! Nature’s Charm are one of my favourite brands to work with as they have such epic vegan products/ingredients! CRUMBED FISH TACO RECIPE

INGREDIENTS:
1 can of banana blossom
1 cup oat milk
1 cup white flour
1 tbsp paprika
1 tbsp cayenne pepper
1 tbsp cumin
1 cup whole grain breadcrumbs
2 tbsp olive oil
1 tbsp Apple cider vinegar

Taco filling:
4 x wraps
1/4 red cabbage
1/4 red onion
1 Avocado
Fresh coriander

Vegan Tartare sauce:
1/2 cup vegan mayo
Handful of parsley
4 Gherkins
1 Tbsp Apple cider vinegar
Pepper & salt

METHOD:

1. Drain can of banana blossom and slice into small pieces.
2. Pour oat milk in a small bowl. Whisk spices and flour in another small bowl and have third one for the whole grain bread crumbs.
3. Dip the banana blossom in each bowl before frying in a hot pan with olive oil. Once the pieces have been fried on each side, add in a splash of ACV.
4. While the banana blossom is frying, prepare the tartare sauce by blending all ingredients together and popping in the fridge until you are ready to serve.
5. Thinly slice red cabbage, onion, tomato, avocado and stuff the tacos, topped with the fried banana blossom.
6. Drizzle with tartare sauce and garnish with fresh coriander.

Since I’m not a coffee drinker (I’ll leave that to all you caffeine lovers 🙈) any herbal tea is good for me, chai, green tea with raspberry and peppermint are my favs. Especially @organicindia chai from @commonsenseorganics ☕️

Are you guys more of a tea lover or a coffee drinker?! I feel like everyone has a preference one way or the other 😉

BBQ Jackfruit pizza 🔥

Who’s made this delicious homemade pizza from my guide to jackfruit ebook?!

Anything with @mamias_nz is a hit in our household, and this pizza is no different! Save this recipe to make tomorrow night 😉

Homemade jackfruit pizza recipe:

INGREDIENTS

PIZZA DOUGH
1 tsp brown sugar
2 tsp active yeast
2 cups flour
1 tsp salt
1 Tbsp olive oil

TOPPINGS
@mamias_nz chilli sauce
Vegan Cheese
1 small Brown onion
4 mushrooms
4 large sundried tomato

BBQ Jackfruit
Note - you can use any pre marinated jackfruit for this recipe!

Salt & pepper
Chilli flakes
Oregano
Coriander
Spring onion
Sliced chilli

METHOD
In a large mixing bowl combine the yeast and sugar with 1 cup of hot water. Stir and let sit until it begins to froth. This should take only a few minutes.

Add in flour and salt, mixing well and kneading into a small ball. Place on your work bench and continue to knead for one minute. Wash the bowl out before oiling it and leaving the dough inside to rise until it doubles in size. This will take an hour or so in the sun.

Once the dough has risen, preheat the oven to 200 degrees celcius and line a tray with baking paper.

Roll out the dough into one large base and place onto the baking paper. Spread Mamias sauce generously over the pizza base. Grate vegan cheese on top as well as thinly sliced onion, mushroom and sundried tomatoes. Place large jackfruit chunks on top, shredding as you wish.

Season with salt and pepper, chilli flakes and oregano. Brush the crust of the pizza with some olive oil before popping in the oven.

Check on the pizza after 10 minutes and serve once golden and crispy! Top with coriander, spring onion and sliced chilli.
